BIWI please send your stick this way.... I'm snacking and it's not good snacking.... argh! I know better but I feel ugh and the hand reaches out for naughty stuff Sad

I did make pizza yesterday... ordinary pizza for 'them' and almond base pizza for me - was yum! I wasn't overly hopeful as I'd heard reports of "eggy" and "bland" but actually it wasn't bad! Was crisp and held the toppings well, the almonds made it seem sweet but with savoury topping was ok, I didn't notice any egg taste. I only ate 1/4 of the pizza (made a large base) as it was filling so will have some for lunch and see what it's like cold.

I am going to step away from the scales for a bit I think. Partly because after weighing in this morning, I got back on them after a visit to the loo (iykwim!) and was another pound UP!! Ffs! And these are the brand new Scary Science Scales as well.

So bollocks to it. I don't trust scales. I am looking significantly slimmer, my clothes fit better and I'm not hungry and having awful sugar crashes all the time and really, that's the point, isn't it? Not what the stupid number on the stupid bloody scales is.

I will drink the water though. Promise.

(Oh, and if you're snacking is it because you're not eating enough/eating enough fat, or is just a habit?)

Paleo Almond Flour Pizza Recipe:
· 2 Cups Almond Meal/Flour
· 2 Eggs
· 2 Tbsp Extra Virgin Olive Oil
· 1 Tsp salt
Instructions:

  1. Mix all the ingredients together to form a dough.
  2. Preheat the oven to 350 degrees.
  3. Lightly oil two pieces of parchment paper.
  4. Put the dough between the two pieces of parchment paper and roll it until desired thickness. *I made mine thin crust and it was very sturdy.
  5. Moved the pizza and bottom piece of parchment paper to a pizza tray.
  6. Bake for 10-15 minutes – until middle is cooked.
  7. Take out of the oven. Put all of your desired pizza topping on it. *Yum, pizza!!!
  8. Put the pizza back in the oven for about 15 minutes – until the veggies are cooked and the cheese is bubbling.
  9. Eat your crispy pizza!

Snacking cause I'm in a flare-up and I'm exhausted and I eat to keep myself awake... I also reach for the carbs.. I know I do it, I've just got to find alternatives that are easy, no work and don't lead me to overdo the nuts..... Got some more tiny pots this week (baby food size) as all my others disappeared.. going to make cream cheese mousse and some sf jelly to keep in the fridge...

Flowers to all the folks finding it hard this week. There must be some meals on this WOE that you really enjoy, no? Why not devise a menu for the next few days that involves all your favourite LC meals, so you've got something to look forward to? Maybe go and do a food shop today and spend some time batch cooking?

I'm rather hungover this morning so that's likely to be my sole useful contribution to the thread today. Hmm

Food for the last few days:

Thursday
B: scrambled eggs, butter, ham
L: left over spag Bol, with a bit of cheddar
D: salmon baked with butter, courgette and leek in cream

Friday
B: as above
L: a few ham and Philly roll ups
D: scallops, bacon, cauli purée, duck with swede and asparagus, choc pot, half bottle prosecco, 4x gin and soda

Saturday
B: bacon, eggs, mushrooms all in butter
L: coffee with cream, broccoli and Stilton soup
D: sausage, swede mash, roast cauli

I've drank at least three litres of water a day, a few BPCs, mostly one a day and about two with cream.

On Thursday morning I was only half an lb up on Monday, so all this has added 2lbs Sad. I've turned down home made cake, biscuits, chocolates, but I'm still not bloody getting anywhere.

I know Friday wasn't great, but it was still pretty LC.

Chester - overall that looks OK but:

  • quite a bit of processed food/meat there: bacon, sausage, ham
  • the chocolate, prosecco and gin will have made a difference (sorry Grin)
  • I wonder if you could up your fat a bit more? (Without seeing your portions/knowing how you're cooking this is a bit more difficult to assess)


But I have to say, I would try a few days without dairy, just to see if this is an issue for you. You are eating quite a bit of it - cream, cream cheese and cheese.

There is no need, though, to have just boring foods without dairy! Have a look at the recipe thread - there are lots of lovely recipes there that are dairy-free.

(BTW - how tall are you/how much do you have to lose?)

I have just had BIWI's avocado and Roquefort. Nice! It would be lovely with some chopped crispy fried bacon too.

Been good food wise here other than too much cream and not enough water. And too much wine. My only valentine treat was a small bottle of prosseco. And I had some red and white wine last night.

Scales aren't being kind BUT I feel slimmer. Stomach flatter.

I just need to drink the water.

Whats a nice quick meal to make with chicken thighs? I was going to do roast thighs with roast tomato, garlic and fresh thyme and serve with green veg of some sort with roast swede/pots but... the thyme is a bit mouldy.. eek..! Reckon rosemary is a good substitute or should I do something different?

My flipping avocado wasn't ripe when I cut into it, even though it felt ripe when I prodded it. So I'm having bacon, eggs and mushrooms, cooked in butter.

Ds's dad has failed to turn up again this afternoon Angry so I'm going to snuggle on the sofa with ds and try to pretend to be interested in Arsenal v Liverpool later. He's requested popcorn which I'm going to need nerves of steel to resist...

Getting abit annoyed with tescos now. They keep delivering fizzy water instead of still and the smallest celearics on the planet. Which means I'm going to have to get put of my dressing gown and go down there to restock. I may buy gin.

It is isn't it Teaand.... I've also remembered I have some of JO's lemon and thyme salt spices so might use that... I deffo want baked chicken though!

BIWI whats your opinion on the following recipe please? The sugar substitute amount sounds a lot.. so am wondering if I could reduce it.. guess I'd need to experiment. Would you reckon this is for maintenance or light bootcamp'ers?

BLUEBERRY BREAKFAST PAN BREAD
Recipe courtesy George Stella / StellaStyle.com

Prep Time 10 min/Cook Time 25 min/Serves 6

SHOPPING LIST
cooking oil spray
1 cup Blanched Almond Flour
1?2 cup sugar substitute
1 1?2 teaspoons baking powder
3 large eggs
1?2 cup heavy cream (may use unsweetened almond milk)
1 teaspoon vanilla extract
1 tablespoon fresh ginger, peeled, minced and sprinkled with a teaspoon of sugar substitute
1?2 cup fresh blueberries (may use frozen)
SPECIAL EQUIPMENT: 8 inch oven proof frying pan (may use 6 cup muffin tin)

directions

  1. Preheat the oven to 375 degrees F.


  1. Spray the fry pan with the cooking spray.


  1. In a larger bowl whisk together the 1 cup almond flour, sugar substitute and baking powder. Add the eggs, heavy cream, vanilla and minced ginger(sweetened with 1 teaspoon sugar substitute), and continue to whisk until completely blended.


  1. Fold in the blueberries, pour the batter into the prepared pan and bake for about 25 minutes until the top starts to brown. The pan bread is done when lightly browned and a toothpick inserted in the center comes out mostly clean.


  1. Remove the pan from the oven and let cool for at least 5 minutes. Carefully loosen the bread around the edges with a spatula, cut into 6 pieces and serve warm with a pat of butter or cream cheese!


George’s Tips:
Frozen blueberries work just fine for this recipe but use them frozen right into the batter. If thawed they will fall apart and turn the bread completely blue.

Light what is it with picking the smallest celeriac or swede or cauliflower?! I want a decent sized veg for a family and even if I was only cooking for me, the tiny sized veg wouldn't be enough!! I've had from ocado and waitrose recently and they've been just as bad with the sizes......

daisy - That sounds like a lot of sugar substitute to me! I wonder if you would need any at all, actually? The fruit would presumably add sweetness anyway?

Definitely one for very occasional Bootcamp Light.

The pizza base I made was quite sweet with no sugar, the almonds def do add sweetness and I agree with the blueberries there's perhaps no need for any sugar at all.. I'll experiment after halfterm!

Yes, I agree - almonds are quite sweet. Also, you have to bear in mind that after you've been low carbing for a while, your tastebuds seem to re-calibrate themselves, so that you really can taste sweetness in foods.

That's so true BIWI. I can really taste and appreciate the sweetness in berries and even in milk and cream these days... and added sugar at 100 paces!

I'm feeling good but I am losing veeery slowly at the moment. I know I need to cut back on dairy / berries / the v occasional drink / the occasional flat white coffee / the od square of 90% chocolate if I want to lose more quickly. It's a balancing act I suppose - I never feel hungry or deprived and am really enjoying my food. I think I'll just keep going at the moment...

hello
am confessing that i have really fallen off the wagon this week Sad. Got a massive list of reasons why that I won't bother you with. But I do think breastfeeding is making is harder for me at the moment and I am really looking forward to six weeks time when I plan to introduce a bottle.

Still, back into bootcamp tomorrow. Onwards and downwards (weightwise I mean).

I agree re sugar... I find even just a square or two of 90% dark chocolate can be too sweet (though the bitterness sets it off just right), I also don't have to share my dark choc as it's too bitter for everyone else... result! Grin
