BC adaptations for DP

DP doesn't like celariac, courgette, cauliflower. He won't eat eggs at more than one meal a day.
As a result he's mainly getting salad with meals while I enjoy celeriac gratin, courgette ribbons etc.
Has anyone got any side dish ideas for us?

Bloody man has just said he doesn't like swede either. He's Irish, he likes potatoes :o
His meals have either salad, broccoli, spinach or leeks with them. That's pretty much it isn't it?

Tell him to man up. Grin My Irish other half loves all that veggies stuff. He even said a non-ironic Yay! when I said I was getting brussels sprouts, so it's not an acceptable excuse. :)

Seriously though, if he's happy enough to just eat those foods and doesn't think he'll get bored, I don't think it's really a problem. Salad veggies, broccoli, spinach and leeks are all pretty nutritious, surely?

If he gets bored, I recommend he takes a walk in a well stocked veg section and has a think in terms of what he might like to try.

I wonder if part of his dislike having eaten my otherwise lovely MIL's cooking is due to veggies having been boiled to death and soggy and tasteless? It's a whole new world when you have them crispy with lots of butter. :)

BIWI he thinks they have an undesirable effect on his gut. He's got a week off work now so will have to have them more than once so we'll see...
Anatanacoat I don't like aubergine :o
Steeleye I reckon that's it! He did try my celeriac gratin but wouldn't try courgette.

Has he tried properly roasted veg, when it's left in the oven for about 50-60mins, til it's almost singed and sort of caramelised. I challenge anyone (except my 4 yo) not to like any veg cooked this way!
