Really easy microwavable low carb meals

thetorturedpoetsdepartmentssecretary · 13/05/2025 15:07

I struggle to eat sensibly and need to lose two stone. Low carb has worked for me in the past, but I really struggle to cook.

Could someone point me in the direction of low carb meals I can microwave? All ready meals seem to include potatoes or pasta or rice. I know I could just not eat the carbs I guess, but it wouldn't be very filling I suppose.

Grateful for any suggestions.

Do you have an air fryer or is microwave your only option?

thetorturedpoetsdepartmentssecretary · 13/05/2025 16:13

I have an air fryer yes. Just find microwave easier.

I was just going to suggest a couple of easy things you can do in the air fryer. I make individual egg muffins with whisked eggs, some cheese, whatever veg and/or ham/salmon or whatever meat you prefer and cook til set and golden on top. Also sliced courgette, a few sprays of oil and a good grating of Parmesan and air fry til golden. This makes a really tasty accompaniment for any meal.

You can can buy cauliflower "rice" pouches that you microwave and are only 2.1 carbs per 100g.

Just combine them with whatever protein you fancy.

I've just eaten toasted keto-bread with microwaved scrambled egg. It was delicious.

thetorturedpoetsdepartmentssecretary · 13/05/2025 18:05

I'm not a scrambled egg fan.

I just thought there might be some low carb ready meals.

What do you put the muffins in before cooking?

It's not my thing personally but in the Lidl app they're advertising a new range of high protein ready meals

clevercloggsadventures · 13/05/2025 18:10

Not the answer but may help - I love the taste of toddler ready meals - no junk, lots of veggies and small portions….with carbs but it is good healthy food. Something like Little Dish and Annabel Karmel

Check out some tins, beans and sausage, meatballs or soups, microwave in Pyrex or plastic.

Iceland do things like curry with no rice.

Eggs - break in toast ramekin, pierce the yolk and cook on low power for 3 mins

Kippers - you don't need to microwave, put the packet in jug and filwith boiling water

I use silicone muffin trays or you can use cupcake holders or a muffin tray in the oven.

Cook do an aubergine parmigiana which is pretty low carb. And most of their curries are low carb if you do with cauliflower rice.

RunningWhileInjured · 13/05/2025 19:40

Those lentils packet options?

I get that, but I'll end up just eating easy stodge if there's nothing low carb in.
