holiday destination/club etc recommendations in Europe for single mum

Hi I have put this question in a travel thread too but it is also something single parents might have an added insight into: Looking for holiday destination suggestions for 1-2 weeks in the school holidays for my son and me. Somewhere in Europe. Near a beach. Not too touristy yet with other children about and reasonable prices. I am on a fairly limited budget.
I was wondering if someone might have been somewhere they could recommend?
My son is nine and thrives on being with other children. We are both into outdoor, reasonably active activities. I am interested in history and would like to go to a place with historic sites. I do not drive. i would also like to be in a position where other adults are about and there is the opportunity to strike up conversations etc and not be too lonesome but at the sometime not be in a place which is frantic and too busy.

How about Italy, not quite as full on family destination as Spain but hotels will have kids entertainment and lots of history. I love Sicily in particular but not sure it works without a car, though friends did manage without one near mt etna using public transport.

Have you looked at Eurocamp? There are loads of diff activities, and very family focused, and there is a single parent discount.

There are single parent holiday companies online and on facebook. We've used them for years for company for us both

Greece is lovely. There are also many parts that aren't overly touristy, but just enough. Which is why I go there. I have been lucky to travel all over Greece as a child with my parents. Always the quieter resorts and typically Greek. As a child I never really appreciated how beautiful the place is but I always loved our holidays. Now in my 30s I don't want rowdy places and appreciate the peaceful settings.

I've been with my young son two times already and will be going a third time in the school holidays. He will just have turned 5 when we go in August.
I am on a limited budget too. I did find going in the school holidays hard. It was about £600 difference from when we went in June. Alot of people have said why don't I just risk the fine. It would be a damn sight cheaper, but I don't really want to get into breaking rules.
We always go self catering. In the heat we struggle to eat loads so it's always cheaper for us to eat out.

Single adult holidays I feel are unfair. I have always paid more for me and my son to go away than my parents who go away at the same time. My son has always been charged as an adult and then under occupancy because the room only has one adult in. It's very unfair
