Cooking and meal plans

Anyone come across any lone parent recipe collections or meal plans? All the ones I've found are based on large families, rather than just me and my 1 year old. I'm OK with cooking but not at all creative, and I'm working full time so trying to be a bit more organised and get together some meal plans / shopping lists which I can rotate every few weeks. I'd love to find a collection of yummy cheap lunch ideas to take to work that only take 2 mins to throw together in the morning and I can make with one hand and DD hanging off my leg. Getting bored of Asda egg sandwiches Smile

Can you bring a meal to work and heat it up? I make up a big pot of curry or pasta (whatever takes your fancy) and divide into little bags. I take one out night before to take to work and heat up. If we have roast chicken on Sunday, I make up a portion in a lunch box to heat up next day in work. So that's my dinner then I don't have to cook in the evening and can spend more time with my DD just chilling out.
