Places for a structural engineer to emigrate

We would like the move abroad- mostly for the experience and adventure and I’m struggling with where we are in the UK tbh.
2 kids age 6 and 3, husband is a structural engineer. I’m a nurse and would happily work but also if husband can support us both I’m not desperate to!
Where would be a good option? We are open to any weather/climate and just want a change. Ideally somewhere we could have a good quality of life obviously.

Do you speak any other languages or would you be looking for English speaking countries? :)

New Zealand will bite your hand off if you want to come.
You'd probably get in just based on your nursing qualifications alone.
Avoid Auckland, it's hot, busy and expensive. Apply for jobs in a smaller city like Tauranga, Whangarei, Christchurch, Dunedin, Nelson - great schools, great quality of life (stuff is expensive but people are less materialistic).
