managed to emigrate being a single parent with no specific skills/qualifications?

Where did you go and how did you do it?

My dream was to emigrate with my h but as he wasn't interested and is now X, I still want to find a way to follow my dreams and give my children a better life.

Would be good to have a fair bit put away I should think to cover any emergencies.

Don't think it is impossible but a lot depends on the destination, whether you can rely on local state education or whether you will have to pay for private education, for instance. Same applies to the health care system. If the state services are not going to be acceptable to you, you will need to be on a better than average wage to make alternative arrangements and that will be unlikely if you have no special skills to offer.

Countries generally have a list of professions they need, so your chances of getting a visa are higher if you meet their skills requirements, some countries give you extra points if you have small children though etc. I expect your best bet is to have a definite job offer in the hand before applying. Easier said than done I know.

How many kids do you have, how old are they and what countries do you have in mind?
