We are thinking of living in Australia or NZ for two years. Does anyone have any experience of taking an older relative with them? I imagine it could be complicated?

You can't! For Australia anyway. Doesn't matter what age they are unless completely dependent on you (and I mean completely including all financial which is very hard to proove).

There are a couple of visas that would be worth looking at:

There are a couple of parental visas one of which takes about 10 years to process and the other costs a minimum of £16,000.

Have a search for parental visas on british expats forum as there is lots of information on there.

Unfortunately, she can't just go with you - I take it you qualify for a visa?

Just saw you are planning on 2 years only. Taht completely rules any visa out as you won't be permanent residents.
