Is it possible to request to a redaction of part of an email that was written about a third party that is stored on an organisation's portal?

Who are you in relation to this, and who are you worried about seeing it?

It’s difficult for me to give a lot of detail.
It’s on a public portal and it contains unsubstantiated false statements about another person.
I thought that rather than pursue the owner of the email for defamation, that person could somehow request that section of the email be redacted instead?

It depends.

Your first option is to contact the head of legal/corporate CEO and point out they are publishing and may be also subject to legal proceedings.
Then they may have a legal obligation to publish the content in full

There is data protection issue of a named individual and processing.

Just to say the email has been redacted and it was much easier than expected. The person I spoke to from the organisation was extremely understanding and already had the measure of the email owner and was expecting it to be redacted. They just had to wait for a request to do it.
