My OH and I have been contacted by my friend's deranged new GF.

She sends messages as she's jealous and insecure and wants to split my OH and me up.

We've blocked her and my friend every time she does this.

The last one was on LinkedIn. We sent her a message to say stop contacting us, we are gathering evidence and will contact your employer.

We sent that message on LinkedIn and then blocked her - will she still be able to see the message?

Also can the police do anything? Can we report to them? She isn't threatening us just causing distress and anxiety, and she won't stop.

You can report unwanted communications to the police as harassment. If she’s causing distress by making threats to break up your relationship and knowingly conveying false information about one or the other of you presumably in an attempt to do so, that would fall under malicious communications.

Leave her employer out of it. It’s not their role to step in (unless she works for an organisation and is providing a service to you as customers) and you’re simply going to inflame the situation further by threatening it.
