If we don't get married...

I have seen people on MN talk about how you can get some (all?) of the legal protection/rights as being married by doing other things, which I imagine include a will...what other things are there?

We aren't sure that we want to get married for various complicated reasons, but would being married give DP any right to contact with my DDs (he is their step-parent) if I died?

DP and I are having a baby together, how would the siblings' right to contact with each other work legally?

I'm really trying to work out whether we should just get married or not!
