Contract to restrict working in the same town?

Hi, just looking for advice. Have also posted in employment issues but thought I would try here.

I would like to have a contract in place to employ a 'fitness' instructor paid per class basis. I would like to put in the clause that means they cannot contact/take clients introduced by us, if they left.
But would also like to know if I can put in the restriction that they cannot work for another business/doing the same services in the same town. Is this possible?
I know you can't restrict someone from working/having a livlihood but we live in a city, so work in surrounding suburbs is possible and plenty of it.
I just want to have some protection within our immediate area - is this possible?
