Copying information at interviews

I work in the childcare field and it appears to be the norm for interviewers to photocopy crb clearances and certificates in the interview.

I have just realised how odd this is - ie 1 interview last week was an initial talk before a 2nd then 3rd interview if I'm lucky and they photocopied these 2 pieces of personal property.

What do they do with them if they choose not to continue with my application? Am I able to refuse to allow them to do so?

They shred them if your not successful, pretty standard practise to take a copy in my experience.

Why would they bother to have a talk/2nd interview in the first place if your not suitable in the first place ifyswim.
