What with my ancestors being chased out of Eastern Europe the family recipes mostly involve beets and cabbage. I’m here for the Brie and chocolate panini, though…

MissConductUS · 13/06/2024 13:19

Is the cheesecake revered in Jewish culture New York style cheesecake, or is it another variant I'm not familiar with. I know that the New York style came about during a period of may Jewish immigrants coming to NYC.

DuskyBlueDepartingLight · 13/06/2024 13:24

@EllaDisenchanted I'm indifferent to sabich but maybe I haven't had a really good one at the right moment.

Much prefer these but only buy them from Tunisian bakeries, never tried to make them at home.

Would love to try the Kahi @Humdingerydoo & feel like I could recreate these fairly easily...

RivkahRose · 13/06/2024 14:34

I’ve been looking up brown eggs (sabich?) and one way to cook them says to put the whole egg in shell in the oven for five hours?! Surely that can’t be right?!

egg and onion though is my absolute favourite filling if we’re still talking eggs though! So simple yet so good

Humdingerydoo · 13/06/2024 14:49

Any cheesecake goes, @MissConductUS !

I guess you probably could make the eggs like that, @RivkahRose but we usually make them either in a pressure cooker or just put whole eggs on top of rice and chicken and let it all slowly cook on a low heat overnight. The eggs are then removed and used for sabich while the chicken and rice is devoured at lunch or dinner

If you know your ancestors history you might be able to track down what variety of cheesecake they (most probably) had. Cheesecake in Vienna, Berlin, Budapest, Warsaw or Kiev* looks similar but they are different! NY scene is something else, a school of cooking in its own right, of course it is based on tricks and recipes form the old life, but similar to Italians they had to improvise at the spot, so new things came to be some things were forgotten.

*I discovered sometime ago that in Ukraine and Eastern Poland people eat a cake called Pascha (rings a bell ;) ) for Easter (!) that's made of cheese. I have no expertise in food history but have a strong suspicion that this is also linked to Ashkenazi cuisine.

CloudyAgain · 13/06/2024 15:58

I've googled that because my ancestors came from Odessa. This came up and looks amazing!

https://www.babaganosh.org/zapekanka/

My great grandparents fled the pogroms. When they got to Australia which is where I am from, they hid their Jewishness and put all their children into Catholic schools. But my grandmother recalled being taken secretly to synagogue by her mother. My dad was brought up as Catholic as well but also remembers Friday Night Dinner with a special bread, prayers and red wine. His father (nominally Christian, but disinterested) finally said to my grandmother when their children were late teens and early twenties that they needed to know the truth. And suddenly so much made sense! My dad and his 4 sisters all threw themselves into the Jewish side. My dad and oldest Aunt are committed synagogue attendees and my aunt is Treasurer at hers. My mother converted when I was in my 30s and when that was done my parents renewed their vows with a Rabbi and I and DH attended. I think I was about 34 when that happened? I was about 35 I think.

I was fortunate enough to work for 3 years in Ukraine. (And also for a shorter time in Russia). I felt so at home there- truly like it was in my genes- which I guess of course it was. Smile

Zapekanka (Farmer's Cheese Cheesecake)

This authentic Zapekanka is a Ukrainian cheesecake made from farmer's cheese. It uses 1 bowl for prep and is so easy to make!

Too late for me to edit, but i was googling based on @deragod's post.

I don't recall Pascha at all in Ukraine. I mean I recall the shape and look of it, but I don't think I ever ate it.

They also have a sweet easter bread called Paska that looks rather familiar as well;

I still haven't made cholent. I've been really ill this week and lost my appetite (stress and anxiety going out of control). Hopefully this weekend.

Ukrainian Paska - A delicious Easter Bread

Paska is the traditional Easter bread made in many Eastern European countries. It is enriched with eggs, butter and sugar. Sometimes it is flavored with vanilla or saffron and contains raisins and nuts as well.

That bread should be called Chonky Challah.

Do you know, suddenly the stories of Jesus feeding the 5,000 are making more sense. That seems to be like a normal amount of cooking for you.

This a random comment, I know, but I wanted to let you know that Unorthodox Love by Heidi Shertok is currently 99p on kindle. It’s a book about an Orthodox Jewish twenty-something looking for love. It’s a very funny book and I thought I’d mention it in case it’s of interest to anyone.

Thanks for the recommendation, just found it on borrowbox as both ebook and audiobook so will definitely give it a read! It sounds great!

😂😂😂😂

In Episcopal theology, the miracle of the loaves and the fishes is considered to be the first church picnic. 😁

I read this in the WSJ last night. It's heartening to see Jewish voices like this in the media. The link should bypass the paywall.

The Cost of Kindness to the Cruel in Gaza - Israel is learning that the wicked must be stopped before they kill the good and pure.

We usually cheat and use puff pastry or frozen parathas instead 🙃 so I can't help!

Now I'm wondering if "filo pastry" is actually just a weird translation from my MIL. Hmm.

I had never heard of parathas before, but I've just googled and it looks just like malawach to me - does anyone here know if it's similar?

I think they're very similar! At least according to my Israeli relatives. They're both puff pastry, just made slightly differently. You can get frozen parathas in large supermarkets if you want to try some and don't keep strictly kosher. Then you can let us know how similar they are ;)

Humdingerydoo · 19/06/2024 18:28

Why am I not surprised that people on the Halal thread on AIBU feel the need to say "if you think Halal slaughter is bad, you should see what the Jews do!". Kashrut isn't the topic of conversation so why is it even being mentioned? 😩

EllaDisenchanted · 19/06/2024 19:33

that thread is insane!!!! Apparently us Jews have to have two fridges now … must tell DH 🤣

I want to comment but I also can’t face the crazy. On Jewish AMAs kosher shechita always gets attacked! Oh and we’re back to being white again 👀

OP posts:
EllaDisenchanted · 19/06/2024 19:40

the anti religion posters are out in force 🙈I think we need a joint Muslim and Jewish thread where we can moan about it together and share recipes 😅

OP posts:
Humdingerydoo · 19/06/2024 19:53

It's seriously batshit. You missed the other anti-Muslim thread though, which was equally bonkers and obviously Jews got mentioned there as well 😅 People just love to hate religions. It's so incredibly depressing! I mean, I take serious issue with certain aspects of Judaism but I'm far from wanting to completely abolish the entire religion 🙃

I'd love a recipe swap thread with Muslim MNetters, although what would be the point in actually making the food? My kids would just refuse to eat it, just like they do everything else I make them!

I need to go and make space for my second fridge now - might need to sacrifice my dining table to fit it in though.
