Very very dull but about to waste a ton of mince- my spaghetti sauce tastes like vinegar...HELP!!

Think I used a cheap Tesco own tomato puree.

Don't want to add sugar as may become sweet and vinegary, so feeling stuck.

Problem is, I did a big batch for the freezer so any advice on neutralising the vinegary taste?

Try simmering it for a good while to reduce, with the lid off.

My mum used to use Bisto, if you're after a shortcut, but that's not exactly authentic.

Add sugar to counter vinagar-iness, followed by beef stock (or bovril, or worcester sauce) to counter sweetness.

And buy Sainsbury's basic in future - much better than Tesco Value IME.

Poor mince - I normally only use Waitrose puree at my poshness!

Can you dilute it with a tin of better quality tomato puree? Then try a teeny bit of sugar, keep tweaking, try the bisto, then a splash of wine if you've got it around.. then perhaps some herbs (dried will do, I usually use Oregano) keep tweaking until it's right. You might end up with more than you started with but if you're freezing that's alright isn't it?
