Spatchcocking is easy...turn bird onto breast and press down then cut out the backbone by running a sharp knife down each side or with big scissors. Chuck in the stock pot pile. Then turn the chicken over and lay out in the roasting tin. No real faff tbh. The idea is to get a large a surface area as possible so it roasts in under an hour.
It was sticky and scrummy and even DH got out of bed for it!

Tidy away

Read Ed a story
Take him to bed
Tidy and put away HUGE pile of clothes on bedroom floor
Sort out ironing pile
Flop into bed
