Please help me buy a portable oven as my gas oven is horrible

Please please recommend an alternate oven. I moved into a rental a month ago and it has a gas oven and cooker. I used a gas oven years ago and never had an issue. But whatever we cook, Sunday roast, ready meals etc it just doesn’t cook properly.

This evening I tried a basic quick mac cheese with tomato on top and after 20 minutes tomato is still cool to the touch. Some parts of Mac cheese is cooked and majority is still cold.
Last Sunday it didn’t cook our roast chicken at all. Partner only realised when he was fishing (don’t ask).
I do not have the patient as I have way too many things to do to stress about food. So please tell me what is the next best not too expensive electric oven I can buy that can sit on the counter top.

i used a Remoska for several years when our oven broke. I have never had a bad meal out of it. Still use it regularly in the winter, not so much in the summer. Have taken it on holidays with us as well.
