Thoughts on upstand on 2 walls with metro tiles along third(splashback) with no upstand

Really struggling with splashback. Don’t want and can’t have quartz as having quite a powerful gas hob, don’t like glass or steel so wondering about metro tiles along one wall,would be quite low tiling area with cupboards. I get tiles and up stand don’t go together so wondered about a break in the upstand along one wall.

Design no no or could work?

I would either just tile behind the hob and have upstand either side or tile that full wall and only have upstand on other worktop. I suspect that tiling the full wall would look better though.
