Budget kitchen refurb tile advice

So I'm getting real wood worktops which I've wanted forever, and painting existing cupboard doors as close to F&B vert de terre as I can get in cupboard paint. Existing tiles are perfectly OK small square rustic oatmeal from 2002, so I feel a bit guilty to be thinking of ripping them off the wall but I'm tired and so are they. I want freshness and light. I'm loving bevelled metro/subway tiles in cream or ivory but are they already dated? And what is the chicest pattern? Do I risk my kitchen looking like a hospital sluice room? What else could I go for?
