Satin or gloss then a choice of water based or oil

I am going to decorate my hallway. None of the woodwork has been touched in 15 years.
I am fitting a oak floor downstairs and carpet on the stairs, but the stair spindles and cupboard under the stairs have a dark stain finish.
So I am going to paint the spindles and cupboard white, as with the doorways, and radiator, but I can't decide if a gloss finish will be too shiny. And then would a satin finish not be tough enough.
I think I am going for a satin finish, but have just discovered that there is a water based option now that doesn't yellow so quickly.
So please can you tell me how you decided to paint your areas, and which you would suggest.
