Moving house soon its needs a luck of paint in every room if we are using latex paint how long would we need to keep baby away from the fumes for? Any ideas or should we be using different paint altogether

Any emulsion will be OK.
Personally, I wouldn't gloss with a small baby around, but it wouldn't cause an issue, afaik.
Open all the windows to air the house when you paint, and again the next day.
