Brighton - can anyone recommend somewhere to stay for 1 night?

It's my 30th this year (omg) and we were thinking of going to Brighton but most of us have young children and can't do more than 1 night and everywhere seems to require 2.....

Does anyone have any recommendations?

The Hilton. You can get some good deals if you book in advance, they have a pool which the kids can go in (Sauna and Jacuzzi for parents) it's right on the beach so you have the prom etc and the breakfast in the Windsor restaurant is fabulous. Not cheap but hey, you're only 30 once!
