Ive booked with Olympic but tickets say flights are with Monarch

Olympic holidays use a bunch of airlines, including Monarch, so yes, I would imagine so. Olympic don't have their own planes.

Yep - I worked for FC before they merged with Tui and they had a set number of seats on T.Cook/Tui/My Travel flights as well as their own flights.
