Any suggestions for things to do/places to go in Dubrovnik?

Christmas present from DH is a long weekend in Dubrovnik, over the Whitsun weekend.

Has anyone been? Can you recommend anything/anywhere in particular?

And what do you think the weather will be like at the end of May?

If you buy the AA Croatia Travel Book there is a route for lovely walk inside the city walls and it mentions a stop at a door in the city wall for a drink. Find it and do it, its fab!
