Luxury hotel in med, no children, where would you go?

Parents are looking to have a nice relaxing holiday after my dad's lengthy chemotherapy treatment. End of April, nice hotel, good food, budget £750 per person..any thoughts?

Geography dodgy so not sure if its med, but kefalonia has a great one - trapezaki bay. Can't recommend highly enough.

Cyprus Coral Bay or Paphos are lovely areas

Sicily - Antares complex near Taormina. Every room with a private balcony or private patio. Built down the side of a mountain with access via funicular railway so no climbing involved. Terrific views over the Straits of Messina and Etna in the distance. Fantastic pool. Would go back tomorrow if I could.
