I have always found Kuoni a very good company for far east travel. Maybe check out some of their packages?

Koh Samui is one of the nicest islands. The imperial and imperial boathouse resorts are nice. Lovely beaches and good facilities. Very nice in July/August (monsoon season) if you are thinking of school holidays. I wouldn't go near the west coast (eg Phuket)in monsoon.

Le Meridien Khao Lak is lovely - it has two wings: one for families and one for couples. You don't have to worry about your DCs imposing on honeymooners.

Pretty sure it has kids' club, though I went there pre-DD. Most resorts in Thailand do.
