Advice on travelling/staying in France

Next August we would like to go to a friend's holiday home in the Ariege region. We will be taking ferry from Dover-Calais and driving down over 3 days or so, staying in the house for a week and driving back over 3 or so days too. The intention is that we get to see other parts of France too on the drive down. My sister and her dh are coming too.

So, first of all, having never been to Paris I am very minded to stay there but feel there may be too much I would want to see for the time given so should I make this a separate trip? We would like to stay in Versailles and then somewhere else further down and Im looking for hotel recommendations, preferably as cheap as possible

When we drove down to south of france last Aug we just put hotel into the sat nav once we had enough driving. Hotel was fine and meant we didn't have to aim to get anywhere in particular.
