Affordable European summer holiday ideas with young children, not too hot

DC will be 7 and 5 years next summer. For the past few years we have gone to a place next to the baltic sea in Poland. It's cheap, not too hot (25-30°) and has lots of things to do with young kids. We love it there but would quite like to go somewhere new but with the same perks.

We like to usually rent an airbnb (or equivalent) because it's handy to have a kitchen, we don't have loads of money and would be helpful if it's not very expensive to eat out etc and somewhere that has a beach/lake/forest and things for the kids to do (nothing too crazy, just playparks etc).

Has anybody found anywhere else like this in Europe? I'd love to go to the med but it's just too hot in the summer with kids. Due to work we would need to go in July.

Latvia and/or Lithuania? Still on the Baltic coast so would expect similar temperatures.

German Baltic coast or the Holsteinische Schweiz north of Hamburg with their lakes? Easy to do trips even to the sea side or to Hamburg.

Bavaria would be also great but it can get hot, I mean all of Germany was hot this year. While the alpine region south of Munich is a favourite, I personally love Frankonia, the area around and north of Nürnberg. Plenty of things to do outdoors, Playmobil Land (not a theme park but great for the age of your children), lakes and rivers, outdoor swimming pools and indoor water parks,

We went to the Austrian alps. You can swim in lake zell and see lidos as well. The mountains had little play parks halfway up.

The Netherlands are fabulous in the summer. So many lovely resorts with lakes and sandy beaches. We loved Terspegelt. Loads to do for children and very reasonable to buy ice creams / meals and you have a fab cabin with your own kitchen too. Easy drive from Calais and mid- late 20s temperature wise.

We've had several holidays in the NL. We used to stay in holiday parks, usually in a mobile home but we have also camped.

Denmark and Sweden are great but obviously prices are closer to the UK than Poland

West coast of Ireland. South Sweden has good beaches. Maybe not so affordable but you can self cater. It’s a bit like east Anglia. We’ve been to Normandy and Brittany and self catered.

I keep seeing good things about Estonia. Could fly into Tallin, do Air B n B in Estonia on Coast and then over to Helsinki to experience Finland. Wouldn't advise staying there for longer than a night as pricey.
