Recommendations for hidden gems, food and thermal spas in Tuscany

2 weeks in Tuscany coming up including Florence, just north of Sienna and a beach north of Luca.

We will have a car.

What hidden gems, great food places and thermal spas can you recommend to us?

I can recommend Montecatini Terme and a trip on the funicular railway up to Montecatini Alto. Absolutely stunning.

Fiesole for the Roman & Etruscan ruins & view of Florence.
Pratolino Park near Florence for a relaxed wander & lovely cafe.

Had lovely food at this osteria near where we were staying in Florence : Pantarei Osteria Pizza e Grill

In Florence, a light lunch at Nerbone in the mercato centrale, and an ice-cream (or plastic cup/bottle of fizz!) at the piazzale Michelangelo at sunset for epic views! If you are going to Lucca, hire bikes when you get off the train and cycle round the walls, then nip into the centre and climb the tower. Then more ice cream.
