Relaxing but interesting suggestions needed

I'm looking for suggestions for a week/10 trip for dh and myself. We weren't sure when his contract would finish so didn't book in advance and its turned out he finishes this Friday and will be off for about three weeks so now we know when but haven't a clue where. We want to relax in sunshine but also have enough to do that we won't be bored, not drinkers, like history, nature, coastal areas. Have been in Amsterdam, Prague, Rothenburg and Bruges this year (two car buying trips combined with a few days relaxing and lots of driving), enjoyed them all but it was go, go, go so need to factor in some chill out and snooze in the sun time too. Further complicated by we're in Ireland and would like to fly from Shannon but can use Cork or if absolutely necessary Dublin airport.

I'd put your local airport into Skyscanner and see what comes up.
Alghero in Sardinia is lovely but I'm not sure if you can get there from Cork, Shannon or Dublin.

Yes, see where you can get to for sensible money from your preferred airports.

There's plenty to do in all the coastal Spanish cities you can fly to easily, Malaga, Barcelona, Alicante etc plus beaches and nice hotels for relaxation.

Also Gdansk would be a good choice. The airport, city and coast are easily connected by train, lots to do in the city and Sopot on the coast is nature and wellness focussed. Very affordable compared with southern Europe and likely to be nicely warm but not mega hot like Spain.

Porto or Lisbon and a nearby coastal area would also be good choices.
