My DS (16) is due to go on holiday to Hungary with his friend's family in August. I'm getting a bit confused about what documentation we (as his parents) need to provide. Can anyone give me some advice please?

Check the Hungarian embassy site for most recent requirements on that specific country.

When any of ours went away with friends we always made sure that they had a signed letter to confirm approval to travel (including our contact details), full set of contact details and back up contacts and copies of the child’s travel insurance documents. Check travel insurance covers any activities or day trips over borders. We asked the same for children we took away with us. We also made sure we had their contact details handy.

Additionally if they are taking prescription medicine take enough medication in original boxes and a print out of the prescription with the GP details (and check it is permitted in the target country). Ensure they and any medics know about allergies, key medical history etc (a note in with his passport will do). Make sure they know if he has eg extra need for sun block or similar but at 16 he really can sort that kind of thing out himself.

Check his phone has travel data cover if needed and that you have arrangements to sent money if required. Make sure he knows how to use the travel insurance if required.

At 16 he can take responsibility for sorting a lot of this himself and its good for him to do it.
