Perfect Euro Itinerary

I’m moving to England for 12 months at the start of the new school year. I’m a single parent and my ex is staying in another continent. I’m looking at travelling for all the holidays to make the most of being in Europe- my kids are well travelled, long hall, trains, buses and boats- they’re 3&6. Money is not an issue, we’ll go to Lapland, I’d like to go to Ireland & poland, Italy- Rome and Venice, Spain, some of France and quite fancy euro rail and Croatia and everywhere!

I'm coming from a very hot country so would not be put off by any heat less than 45 degrees, I would also struggle in just all cold.

id love a perfect itinerary please!

Thank you all. Sorry about going AWOL- it’s been a crazy couple of weeks. Some amazing ideas here thank you. I’ll absolutely look into Germany and I’ve also been looking at Energlandia in Poland near Krakow. So if I take the advice to make the time like small family holidays I could start to plan to split them up.
I’ve never used an agent so @titchy is right, I’d plan myself. My kids are also early to bed and rise so an Airbnb apartment is better for us with doors and a lounge area and kitchen. This means they can eat at 5pm and start the evening wind down, then eat breakfast at 6 and I can keep an ear out while having a lie in rather than the restrictions of a hotel too which makes it easier for me to organise it all.
