Ibiza in early May

Obviously I can read the forecasts! I’m going out first week in May and need to sort clothes. I’m thinking denim jacket for evenings, will I get away with dresses and sandals or need more?

As you’ve said OP, you will need to read the forecast just before you travel as it can be very changeable that time of year. FWIW I went to the Balearics Mayday BH weekend a couple of years ago and it was lovely in the day (dress or shorts and sandals) but a bit cooler in the evening (so cardi, jacket). But that was just one trip. The weather could be very different this year.

Bring trainers or closed footwear and it’s on the chilly side at night but should be ok to sit out for drinks early evening.

It can vary a lot.
Days will be warm enough for t shirts and shorts although you might get the odd spot of rain. We got thoroughly soaked one year and DH hadn't taken spare trainers.
Evenings can be warm but sometimes there's a cold breeze so take a fleece or jacket. We were wrapped in blankets at an outside bar last year.
Edited to add you might want trainers rather than sandals, or both.
