40th birthday long weekend trip ideas in Europe with my twin

My twin and I are turning 40 in September. We would like to have a long weekend together to celebrate and are struggling to identify a hotel that meets our needs.

We live in different countries and comparing flights from where we are trip ideally is in Bergen, Zurich, Basel, Budapest, Denmark, North Germany or London area. But if there is a specific hotel we can look for more flights if worth it.

What we would like is relaxation (spa or thermal baths or similar), good food and nature to have a catch up weekend to relax and chat and have good food. Ideally in nature.

Any recommendations for hotels you have been or would recommend. Budget is flexible but would rather not spend exorbitant amounts!

Austria has good spas, nature, good food. Not as expensive as Switzerland.

Octant Furnas was great in the Azores, flights to Ponta Delgada, has hot springs, botanical gardens, beautiful nature and were great on my birthday (free champagne, cake, free room upgrade to one with a pool). Sometimes you can get direct flights, sometimes it's via Porto or Lisbon. In UK currently direct is BA from Heathrow, when we went Ryanair went direct but currently stopped.

Octant Furnas looks amazing. Flights are not that convenient unfortunately from where my sister lives, but it is on the list!

Schloss Elmau, although more Bavaria so unsure for your travel options. It sits in nature and the service was wonderful.

Villa Copenhagen is far more central but so lovely we have stayed twice.

Should have said we are flying to Salzburg they are collecting us as they run a shuttle.

There was the option of a train to local station and then a shuttle but not much of a price difference.

If Austria works for you, you could consider the ValSaa Alpinresort in Saalbach. I'd also usually recommend the Adler Resort in Hinterglemm, but the ski lift directly next door to that hotel is being demolished and rebuilt over the summer so it is likely to be noisy.

I’ve never stayed in the hotel, but love the Bagni Nuovi in Bormio. Loads of good food and nature around but doesn’t fit your flight preferences.

Fairytale castle hotel, (albeit built in the 1930s). Maybe not the full on thermal spas you’re looking for, but great hiking and cycling countryside. Take the cute little narrow gauge open train from Miskolc for a bonus!

Portmeirion in north Wales. Lots to do in the area, still warm enough for the outdoor pool. You can choose hotel or one of the rooms around the estate.
