Southern Spain

Looking for ideas and recommendations for places in Southern Spain on the quieter side, away from main tourist areas. We like a bit of culture, old towns, museums, things to see, doesn't need to be near a beach. Anyone been anywhere nice they would recommend?

Ronda is very much on the tourist trail but tgere's a reason for that - it is absolutely beautiful. It's about a decade ago now but we stayed in a house a few miles outside the town and had a lovely holiday. We found that the town got very busy with day trippers, particularly coach parties from about mid morning to mid afternoon, but there didn't seem to be that many people using it as their main base. So we tended to either stay at home (the house had a pool) or go somewhere else during the day and go into town in the evenings when it was much quieter. I mean it wasn't deserted, but not packed either. You could get a table in a restaurabt reasonably easier and walk around the town, take photos etc without encountering huge groups of visitors.
