Single Mum with 5y/o and Disabled 2y/o holiday ideas??

I'm planning to take a trip abroad with my children by myself next year and I want to start planning and booking now, my 2 y/o cannot walk so we need somewhere that's not too difficult of a landscape, preferably a half board or all inclusive hotel with things onsite, a place with culture and excursions - somewhere that isn't too far on a flight from Manchester and is POC friendly - we've been to Lanzarote and Turkey but that was with other family and we had some complications so I'm wondering if there's anywhere really disability friendly.

Cambrils in tarragona is great. My ASD daughter 5 is a flight risk and this place was great. It was like a village with everything there and felt very safe

Maybe a cruise? Unlike hotels, most cruises have childcare for children as young as 2 and they provide all the necessary equipment like travel cots high chairs, etc… The ships are obviously flat and have lifts and ramps so you can avoid stairs. It’s really not uncommon to see people in wheelchairs or pushing buggies around. Absolutely loads to do on the ship, plus a bit of easily-organised culture with excursions at the ports.
