Will we be out of place on a Neilson holiday?

I can see they are very focused around sports and activities.

I want to go as my two kids like to be very active and are really into sailing.

However myself and my husband... less so. He does go regularly on an exercise bike but is pretty overweight and not into group activity classes. I am an occasional gym goer and will happily do yoga and sometimes bodypump but can't really ride a bike and am also a bit overweight. Not totally out of shape but not super toned up.

Basically, I think it will be great for the kids but are we going to feel intimidated by the general level of sportiness and fitness? Is there enough scope to occasionally try some kayaking or whatever but mainly lie by the pool and chill out if we don't want to do loads of activities or is it constant noise, aqua aerobics and water polo?

you'll be fine, lots of people don't go to work out like it's olympic bootcamp, there's always a range of ages, bodies and fitness levels. Their moto is "relax as hard as you like" and that's really what you can do, particularly as the kids clubs are amazing so you'll get plenty of relaxation time to yourselves. Do try things you wouldn't normally do at home too though as it can be fun and lots of people will be in the same boat. Round the pool tends to be quiet IME, maybe an aquafit class once a day and I don't recall ever seeing water polo. Some of the resorts have more than one pool too.
