Where would you go before being stuck to school holidays?

Inspiration needed for where to go on our last holiday before being tied to school holidays. It will be March-September next year with a 3month-9 month old and a 3/4 year old.
Keen to make the most of places where the price jumps hugely in school holidays.
Our priorities are good food and views. Recently have enjoyed Lake Garda and Rhodes, previously loved Granada, but also aware with a small baby we need something easy as well. Looking Europe/ short haul. Not bothered about evening entertainment.
Flexible on budget as willing to go into savings for this as our last chance for a bit of luxury but want to feel it is good value.

Please give me your ideas! (We will be fitting into a final cheap centre parcs in probably too so not looking for UK options).

Hoping someone has some good rexommendations of lovely hotels!

That's hard, because you have to take your children with you. Once mine have moved out I want to go to the Isles of Scilly again and to Greece when it isn't to hot. But I'm not sure I'd take small children. Center Parcs is much cheaper out of school holidays and good for children.
