NYE short break recommendations

I know it’s summer but thinking ahead to NYE. I’ve always wanted to go to Centre Parcs for NYE to their winter wonderland but every year I get to Oct, start to think of it & realise it’s too expensive so last year I decided to book a whole year ahead for our family of 5 to go with the intention of paying it off over the yr. However my youngest DD will be with her ex & the older two have said they want to party with their mates so I’m now thinking the £1800 I had budgeted for 3 nights at centre parcs is a waste of time & myself & DP could have a few nights away alone instead for much less. I paid extra for flexible cancellation so got till Oct this yr to change my mind & cancel.
So where would you go for NYE with a budget of £1500 or less.. I don’t want to party as such, nice dinner, maybe a spa, or something in the countryside, relaxing, cosy, maybe with the dog but could leave her at home. 2 nights or more. Within a couple of hours of Nottm.
Throw me your recommendations!

Look at Buxton crescent hotel (some rooms allows dogs). They had a lovely new years package advertised though i didn’t go, i prefer to be here as local pub atmosphere is brilliant (i do recommend our town though local hotel options are premier inn or Ibis budget - not posh)
