South of France - where to stay

I’d love to go to the South of France over the summer holidays, with husband and 12 year old daughter. I’ve been to Nice. We want beach/pool/beautiful restaurants. Husband has mobility issues - so needs to be fairly flat.
Flights are fairly cheap so could look at up to £1200 for 5 nights. Does anyone have suggestions. Would be great if it was somewhere where other kids / teens were.

We went to Le Grau du Roi after flying in to Nimes, because it has a good sandy beach, enough to keep the dc occupied and it's accessible by a scenic train from Nimes. We stayed at L'Oustau Camarguen which was great because it had bike hire, family rooms and a heated pool.

Fab. We stayed in Aigues Mortes. A fabulous walled town.

We've stayed in Aigues Mortes too - it's lovely. There' a huge sandy beach at Le Grau de Roi and also boat trips and a big funfair.
