Where do we want to go? 🫣 One week in August

It’s not often I can’t decide where to go but I really need some ideas here!
We have one week in August, so not looking for long haul.
Ideally I don’t want all inclusive, but as my DS (11) will be on his own with me and DH, we’d like somewhere that has lots of other children/activities if possible (which mainly seems to only be an option if all inc).
We’d like somewhere with places we can walk to from the hotel, so not a remote area. Towns/villages with nice restaurants, places to go sightseeing in the day.
Maybe some local water sports or boat trips.

What kind of budget do you have? Olympic Lagoon Resort Olympic Lagoon Resorts Paphos: 5-Star, All-Inclusive Hotel is fantastic and walking distance to paphos city centre but is fairly pricey.
