Depends what type of holiday you’re looking for and what budget you have available. May I ask why you’re excluding Europe in particular?

Parts of the US and Canada. Iceland (sort of Europe but feels like a million miles away!).
and the southern hemisphere are in winter!

South Africa, Kenya, Tanzania, Namibia, Peru, Brazil. Some of those are hot in the middle of the day but then the temperatures ease off.
