When is the best time to book a holiday?

Looking at taking my children abroad for the first time in the May half term next year. After a lot of searching I found a hotel that had good reviews but didn't book immediately. The price has gone around £150 per person in just a few weeks.
Any holiday experts know whether prices continue to go up or are they likely to drop, and whether there is a good time to actually book?
Haven't been abroad in so long I don't know when the best time is. Thank you

My experience is earlier the better as once they start going up they don’t tend to come back down (the only exception to this is sometimes, they go up as the tour operator has ‘big sale’ coming up).

Or leaving it to the very last minute, but this is only if you don’t care where you go and have a few different airports to choose from.

Thank you. Was hoping this would not be the case but was expecting it to be so. I really shouldn't have been so indecisive initially!
