We went for 5 days last April. I think it depends on what you want to experience 😁.

We did not have breakfast included but got a $15 dollars per person per day credit for each adult in the room (2). We ended up buying bananas and porridge pots to use for breakfast and using the credit for a cocktail.

Lunch were tacos or a pizza slice so 10-15 dollars.

Evening meal we went out to the arts / brewery district off strip and it was really reasonable and fresh. Some places you would need to book, others you just rock up and pay at the bar. $30-50 dollars. I think this was on the lower end of the budget.

There are loads of options, all over the strip. Have you joined one of the Facebook groups on visiting Vegas as they have loads of tips.

We spent money on trips like Grand canyon etc which was about $700 pp but included a short plane ride and helicopter and boat ride (mega - but best day trip ever!) and shows and then used free play in every casino to gamble.

Shopping also was fab!

Enjoy!
