Help me choose a Xmas hol !

This is going to be annoyingly vague, sorry In advance !
We've decided to bite the bullet and book a holiday for over Xmas this year. 2 adults no kids. No budget in mind but not extortionate, we're mid earners, comfortable but not loaded. I can stick it on a credit card.
Want some winter sun so will be longish haul, 7-10 days to make it worth the journey. I'm not keen on suuuuper long flights these days.
Probably flying around 20-21st but don't mind flying on Xmas eve/ New Year's Eve etc.
I'd love beach, nice sea to swim in, snorkelling (not rough surfy beaches then) sunshine, nice local culture, cafes and restaurants. We're not super active but don't lie there cooking all day either, somewhere in between I guess.

Not bothered about celebrating Xmas really if it's not a thing where we go.

WHERE TO GO?

Been to Bali, Nicaragua, Costa Rica, loved them. Did day trips such as boat trips and rainforest hiking which we loved. Those were separate air BnBs and flights.

Also enjoyed an all inclusive Tui holiday this year so wouldn't rule that out. Liked the ease of it all, transfers etc.

I'm wondering about - Mexico, Sri Lanka, Mauritius, goa ? Dubai/ Egypt don't appeal so much. Not morrocco as I'm going already this year.

I appreciate I'm annoyingly open but if anybody has any ideas/ insights/ tips I'd love to hear them. Thank you!

My favourite country so far.
Went in UK summer, want to go back in the winter to visit the south.

Oman. This is a flavour of what it's got. Not suggesting you do a tour, it's just giving an idea of what's there. Weather superb at this time of year too. BTW it's nothing like Dubai, in case you wondered, it's much more relaxed, friendly and well, just lovely.

Mauritius is great over Christmas, but a 12 hour flight - if that’s not too much for you. Has all requirements on your list - nice beaches, snorkelling, culture and food…
