Holiday Inspiration

Looking for some holiday inspiration and recommendations for myself and my DH - children are finally of an age they can be left at home! We haven't really travelled that much just the two of us as we had our children young. Would prefer AI as we will be hoping to have a break from everything but would love to be near a busyish town/ old town with nice bars etc.
Bonus points for somewhere that has good walks and lots of historical areas/ churches to explore.
DH, up until about 5 years ago, had a massive fear of flying and has slowly been working on this to the point he can now fly for up to around 4.5 hours.
We are restricted to school holidays as I teach so are looking for something in the summer holidays.
Places we have enjoyed as a family:
Naples - loved the history, did Pompeii, Vesuvius and catacombs.
Zante - beautiful island, super friendly people around us, amazing food! Plenty of history to explore.
Benidorm - was fun, cheap and cheerful.
Kos - beautiful island but we were in a very quiet area and so restricted on where we could go and when without relying on taxis.

Any help would be amazing!

Rhodes was lovely! Ancient ruins, walled city.
We also have just done Naples/ pompei etc.

Have same problem but different (angsty teen, tendency to clash on trips), and need to branch out of 'week in Spain' norm, but so overwhelmed by destination research that I always give up!
