going to Cape Town late January for 19 nights - any must do's?

Beach time
Lovely hotels/guest houses
Couple of games of golf
Want to move around a bit, visit Stellenbosch, Franschhoek, Paarl?
At least 7 nights in vicinity of Camps Bay, but where to stay the other 12 nights?
Don't want to be living out of a suitcase, so the remaining 12 nights to be split equally into two blocks of 6 nights.
