Childfree breaks

Hi, I'm looking for recommendations for childfree long weekend breaks, from London. We have an annual opportunity to go away without the kids in March. We went to Palma this year which was great - pleasant weather (late teens/early 20s and sunny), not crowded, classy, great food, and things to do without being overwhelmed. We like fine dining, art galleries, and historical sights. I'd be up for somewhere with a bit of sunbathing if the weather was warm enough, but I would want to do things as well. Any other suggestions, preferably with pleasant weather?

I was going to suggest Bilbao but it might not be warm enough for you at that time of the year. I think it would tick a lot of your other boxes though.
Or any of the Andalucian cities - Seville, Cordoba, Jerez etc

2nd Seville - should be reasonably nice in March and there's lots to see - or Malaga, Granada, Cadiz....
