Mum daughter baby trip

I've been told this is a thing now to do at the end of maternity leave. My DD is a teacher as is her husband so a last chance for her to go away before being stuck with school holidays
Am v happy to do this but where? Could go in March ideally.she returns to work in April.
Would like a heated pool or maybe a pool not necessary?
Maybe an apartment would be better than a hotel although I love a hotel!
Able to walk to restaurants etc not opposed to AI but my experiences haven't been great other than Ikos but wrong time of year for them .plus quite £££
Good health care in case the baby gets unwell is also a factor/ had a v bad experience in Turkey once.

You want an apartment/villa with a baby so you have space to socialise in the evening when the baby is asleep.

What do you all like doing? I’d make the decision more about the adults. There’s plenty of time for child-centric holidays once you GDC becomes a toddler.
