What would you do with 3 weeks in California?

Planning a trip for April 2025. Non-negotiables are a few nights in San Francisco to see family and 3 nights in Anaheim for Disney (booked by said family).

I'm thinking Monterey Aquarium, Hearst Castle, Santa Barbara, LA, Sequoia and Yosemite National Parks.

What would you do?

Travelling with 2 primary age children, one's a wheelchair user.

@Iwishiwasapolarbear I've heard great things about Lake Tahoe but as it's likely to be quite cold, it was something we sacrificed, so we could see more of SoCal.
